Here’s A Gluten Free Oatmeal Cookies Recipe Today

Each year thousands make a major lifestyle change and start to eat gluten-free. The reasons why vary. Some think it’s a healthier way to live while it becomes a necessity for others who have been diagnosed with celiac disease. In the beginning it may seem like many of your favorite foods like breads, cakes and cookies are now on the forbidden food list. We’ve come a long way since the early days of living gluten free. There are now hundreds of delicious products and thousands of gluten-free recipes out there that allow you to enjoy all your favorite foods – just in a slightly modified way. Take this gluten free oatmeal cookie recipe for example.

Gluten Free Oatmeal Cookie Recipe

* 1/2 cup margarine
* 1/2 cup brown sugar
* 1/4 cup table sugar
* 1/2 tsp vanilla
* 3/4 cups gluten free flour
* 1/2 tsp baking soda
* dash of salt
* 1/2 tsp cinnamon
* 1 large egg
* 1/2 tsp xanthan gum
* 1 1/2 cups gluten free oats
* 1/2 cup raisins (you can leave these out)

Preheat your oven to 350 degrees. Soften the margarine either by sitting it out for 30 minutes or by sticking it in the microwave for a few seconds. Cream the butter and both the brown and regular sugar with a hand mixer or use your kitchen mixer. Next it’s time to beat in the egg and vanilla. Be sure to keep mixing until everything is smooth and well combined.

In a separate bowl combine the flour, baking soda, gum, cinnamon and salt. Stir it together until well combined, then work the flour mixture into the butter and egg one. Add the oats and then the raisins (if you are using them) to the batter and stir until they are well mixed in.

Get a large cookies sheet and drop the cookies on, using approximately one tbsp of batter for each. I like to work with two large spoons to do this, but a melon scooper or small ice cream scooper work as well.

Bake the cookies for 10 to 12 minutes. Take them out when they start to turn golden brown. Let the cookies cool for a good five minutes on the sheet, then move them to a wire rack. Keep them in an airtight tin if there are any leftover.

This recipe yields two dozen oatmeal cookies.

If you don’t like making a recipe like this from scratch, you can also find delicious cookie mixes in all sorts of different flavors (including peanut butter, chocolate chip and of course oatmeal) at your local health food store and online. They are a good alternative. There are even some premade cookies that you can purchase that taste pretty decent.

In other words, there is no reason to give up delicious baked goods when you are living gluten free.
